Keto Alternatives to Pasta: 3 Noodle Swaps

Try zucchini noodles, shirataki noodles or spaghetti squash instead of pasta. Compare serving swaps, preparation tips and texture limits.
en keto alternatives to pasta

Zucchini noodles are a quick keto alternative to pasta when the sauce is the main attraction. Shirataki noodles hold a noodle-like shape with a different, springier bite. Spaghetti squash is another lower-carb option, but its carbohydrate content per serving is higher than the other two, so portion size matters if you follow a strict keto target.

Quick answer

Zucchini noodles: 1 cup prepared for 1 cup cooked pasta. Spiralize zucchini and warm it briefly; overcooking releases water. It is especially useful under pesto, meat sauce or a cream sauce served immediately.

Zucchini noodles

1 cup prepared for 1 cup cooked pasta. Spiralize zucchini and warm it briefly; overcooking releases water. It is especially useful under pesto, meat sauce, or a cream sauce served immediately.

Shirataki noodles

1 cup prepared for 1 cup cooked pasta. Rinse well, drain, and dry-fry before saucing. The springy texture differs from wheat pasta; check the specific pack for added starch and allergens.

Spaghetti squash

1 cup cooked strands for 1 cup cooked pasta. Roast until tender and pull into strands with a fork. It is mildly sweet and softer than noodles; keep the portion modest if following a strict carb limit.

How to choose

Match the swap to the sauce. Toss zucchini noodles briefly in a hot pan so they stay firm and don’t water down a cream sauce. Rinse and dry-fry shirataki according to the package before adding sauce. Roast spaghetti squash and scrape strands only after it is tender.

What to watch for

These are plate-volume substitutions, not dry-pasta cooking ratios. None releases starch like wheat pasta, so a sauce that relies on pasta water may need another method. Check shirataki labels because flavored or premixed products can add starch or allergens.
