All the flavors of strawberry cheesecake transformed into a creamy frozen yogurt that won't require elastic waistbands.

Ingredients
  

  • 2 cups plain Greek yogurt
  • 4 oz cream cheese softened
  • cups fresh strawberries hulled
  • 1/4 cup erythritol or monk fruit sweetener
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup crushed graham crackers optional
  • 2 tablespoons butter melted (for graham crackers)

Equipment

  • ice cream maker
  • Bowl
  • Electric mixer
  • Blender or food processor
  • freezer-safe container

Method
 

  1. Puree strawberries with 2 tablespoons sweetener until smooth
  2. Beat cream cheese until fluffy (arm workout: complete)
  3. Mix in Greek yogurt, remaining sweetener, lemon juice, and vanilla
  4. Fold in strawberry puree, leaving some swirls visible
  5. Churn in ice cream maker for 25 minutes
  6. Mix graham crackers with melted butter if using
  7. Layer frozen yogurt with graham mixture in container
  8. Freeze for at least 3 hours

Notes

For "New York style," add an extra 2 oz cream cheese. Fresh strawberries are best, but frozen work in a pinch
