- Lay out both slices of bread. Layer the mozzarella, tomato slices, roasted red peppers (if using), and basil leaves on one slice. Sprinkle with salt and black pepper and top with the second slice. Lightly spray the outside with olive oil spray if desired.
- Preheat the air fryer to 370°F (188°C). Place the sandwich in the basket and air fry for 3 to 4 minutes, then flip and air fry another 1 to 2 minutes, until the bread is golden and the cheese is just starting to melt.
- Remove and let cool for 1 minute. Drizzle with balsamic glaze (or your alternative), slice in half, and serve immediately.
