A lighter air fryer Caprese sandwich with part-skim mozzarella, ripe tomato, fresh basil, and a balsamic drizzle on toasted whole grain bread, under 300 calories.

Ingredients
 
 

  • 2 slices whole grain bread about 70 calories per slice
  • 2 slices tomato 2 to 3 ripe slices, about 40g
  • 2 slices part-skim mozzarella cheese 2 to 3 slices, about 28g
  • 4 leaves fresh basil 4 to 6 leaves
  • 2 strips roasted red pepper 2 to 3 strips, optional
  • 1 teaspoon balsamic glaze or fig vinegar, or ½ tsp honey plus ½ tsp lemon juice
  • olive oil spray optional, for crisping
  • salt and black pepper a pinch each

  1. Lay out both slices of bread. Layer the mozzarella, tomato slices, roasted red peppers (if using), and basil leaves on one slice. Sprinkle with salt and black pepper and top with the second slice. Lightly spray the outside with olive oil spray if desired.
  2. Preheat the air fryer to 370°F (188°C). Place the sandwich in the basket and air fry for 3 to 4 minutes, then flip and air fry another 1 to 2 minutes, until the bread is golden and the cheese is just starting to melt.
  3. Remove and let cool for 1 minute. Drizzle with balsamic glaze (or your alternative), slice in half, and serve immediately.

Notes

Net carbs: 25g per serving (30g total carbs minus 5g fiber).
Substitutions: Use light or reduced-calorie bread to save calories, plant-based mozzarella for a vegan version, and add arugula or baby spinach for extra greens. Heirloom tomatoes add color and flavor.
Storage: Best fresh. Assemble just before air frying so the bread stays crisp.
Reheating: Re-crisp in the air fryer for 1 to 2 minutes at a slightly lower temperature.
