A sun-ripened summer parfait layering vanilla-honey Greek yogurt with fresh peach slices and warm toasted almonds. Simple, satisfying, and on the table in under 10 minutes.

Ingredients
 
 

  • 1 fresh peach medium, sliced; firm or slightly underripe works best
  • cup Greek yogurt nonfat or low-fat
  • ½ teaspoon pure vanilla extract
  • 1 teaspoon honey
  • 2 tablespoon sliced almonds toasted
  • 2 fresh mint leaves optional, for garnish

Method
 

  1. In a small bowl, combine Greek yogurt with vanilla extract and honey. Stir until smooth.
  2. Place sliced almonds in a dry skillet over medium heat. Toast for 2–3 minutes, stirring frequently, until golden and fragrant. Remove from heat and let cool.
  3. In a clear glass or jar, add a spoonful of the vanilla yogurt mixture. Add a layer of peach slices and sprinkle with a few toasted almonds.
  4. Repeat layers until all ingredients are used, finishing with peach slices and a generous sprinkle of toasted almonds on top.
  5. Garnish with extra peach slices or mint leaves. Serve immediately or store with almonds kept separate to preserve crunch.

Notes

Substitutions: Swap peaches for nectarines or apricots. Use walnuts or pecans in place of almonds.
Storage: Store assembled parfait (without almonds) in the fridge for up to 2 days. Keep toasted almonds in a separate airtight container at room temperature.
Make-ahead: Assemble parfaits in jars up to 2 days ahead; add almonds just before serving to retain crunch.
