- Place carrots, orange juice, orange zest, ginger, cold water, and honey (if using) in a high-speed blender.
- Blend until completely smooth. Add more water if you prefer a thinner consistency.
- Season with salt and pepper. Add olive oil and blend briefly if using.
- Chill for at least 1 hour before serving to let flavors meld.
- Stir and serve in bowls, garnished with herbs, yogurt, or cream, and extra zest.
