  • 1 pound carrots peeled and roughly chopped
  • 1 cup fresh orange juice about 2 large oranges
  • 1 teaspoon orange zest
  • 1- inch piece fresh ginger peeled and chopped
  • 1 cup cold water or more for desired consistency
  • 1 tablespoon honey or maple syrup optional, for extra sweetness
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon extra virgin olive oil optional, for richness

  1. Place carrots, orange juice, orange zest, ginger, cold water, and honey (if using) in a high-speed blender.
  2. Blend until completely smooth. Add more water if you prefer a thinner consistency.
