Ingredients
  

For the yogurt base:
  • 3 cups plain Greek yogurt
  • 1/4 cup honey or agave nectar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
For the berry swirl:
  • 2 cups mixed berries strawberries, blueberries, raspberries
  • 2 tablespoons monk fruit sweetener
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch

  • freezer-safe container

Method
 

  1. Make the berry swirl first: combine berries, sweetener, and lemon juice in a saucepan
  2. Cook over medium heat for 8-10 minutes, mashing berries as they soften
  3. Mix cornstarch with 1 tablespoon water, stir into berries
  4. Cook 2 more minutes until thickened, then cool completely
  5. Whisk yogurt, honey, vanilla, and salt until smooth
  6. Churn in ice cream maker for 20 minutes
  7. Transfer half to container, dollop half the berry mixture on top
  8. Add remaining yogurt, then remaining berries
  9. Use a knife to create swirls (don't overmix – we want those pretty ribbons!)
  10. Freeze for at least 3 hours

Notes

Fresh or frozen berries work equally well. Strain the berry mixture if you prefer no seeds
