Ingredients
 
 

  • ½ cup Greek yogurt nonfat or low-fat
  • 2 kiwi peeled, sliced into rounds
  • 1 teaspoon lime zest freshly grated
  • 1 teaspoon honey
  • 2 tablespoon gluten-free granola
  • 1 teaspoon unsweetened coconut flakes
  • 2 fresh mint leaves for garnish

Equipment

  • 1 Small bowl 
  • 1 Sharp Knife
  • 1 Clear glass or jar
  • 1 microplane or zester

Method
 

  1. In a small bowl, combine Greek yogurt with lime zest and honey. Stir until smooth.
  2. Peel and slice kiwi into rounds.
  3. Spoon lime yogurt into the bottom of a clear glass. Add a layer of kiwi slices. Sprinkle 1 tablespoon granola on top.
  4. Repeat the layers, finishing with kiwi slices on top.
  5. Garnish with coconut flakes and fresh mint leaves. Serve immediately.

Notes

Substitutions: Swap kiwi for green grapes (halved) or honeydew melon. Use maple syrup instead of honey to keep it vegan.

Make-ahead: Prepare the lime yogurt mixture up to 3 days ahead and store covered in the fridge. Slice kiwi and assemble just before serving for the best texture.
