Method
 

  1. Start by combining your chopped onion with the sauerkraut, wine, bay leaves, caraway seeds, and pepper in a heavy, large saucepan – this is where all the flavor magic begins, so don't skimp on that heavy-bottomed pan because it'll give you the even heat distribution you need.
  2. Cover the mixture thoroughly and bring it to a gentle simmer, then let it bubble away happily for exactly 30 minutes, allowing all those aromatic ingredients to meld together into something that smells absolutely divine.
  3. After those 30 minutes are up, nestle your kielbasa sausage right into that fragrant mixture, making sure it's well-surrounded by all those lovely flavors, then cover again and continue simmering for another 20 minutes until the sausage is heated through and has absorbed some of those incredible flavors.
