Main
  • 8 slices Bacon Crisp and crumble after cooking.
  • 1 large Onion Sliced for caramelization.
  • 1 teaspoon Sugar For caramelizing onions.
  • to taste Salt
  • to taste Black pepper
  • 2 cups Macaroni pasta Cook according to package directions until al dente.
Sauce
  • 2 tablespoons Butter For making the roux.
  • 2 tablespoons Flour For thickening the cheese sauce.
  • 2 cups Milk For the cheese sauce.
  • 1 teaspoon Ground coriander For flavoring the cheese sauce.
  • 2 cups Cheese Type not specified, use your favorite melting cheese.
Topping
  • 1/2 cup Gorgonzola cheese For topping.

Equipment

  • Large nonstick skillet
  • 13 x 9 inch casserole dish
  • Large pot for cooking pasta
  • Colander
  • Paper towels

Method
 

  1. Preheat your oven to 350 degrees F. In a large nonstick skillet, fry the bacon until crispy and golden. Drain on paper towels, reserving about 2 tablespoons of bacon fat in the skillet.
  2. Add sliced onions to the skillet with the reserved bacon fat. Sprinkle with sugar, salt, and pepper. Cook over medium heat for 15 to 20 minutes, stirring often until golden and caramelized.
  3. In a medium saucepan, melt butter over medium heat. Add flour and stir for 2 to 3 minutes. Gradually whisk in milk, salt, and coriander, bringing to a simmer until thickened. Stir in cheese until melted and smooth.
  4. Cook macaroni according to package directions until al dente. Drain and combine with crispy bacon, caramelized onions, and cheese sauce in a 13 x 9 inch casserole dish.
  5. Top the mixture with crumbled gorgonzola cheese. Bake in the preheated oven for 30 minutes until bubbly and golden on top.

Notes
