Ingredients
  

  • 1 pre-made arepa or 1 English muffin as substitute
  • 2 oz cooked shredded chicken
  • 2 tablespoons shredded cheese
  • 1/4 avocado sliced
  • 10 plantain chips
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • Salt to taste

Equipment

  • Skillet or toaster
  • Sharp Knife
  • Small mixing bowl

Method
 

  1. Warm arepa in skillet or toaster until crispy outside
  2. Mix shredded chicken with garlic powder, cumin, and salt
  3. Carefully slice arepa horizontally to create pocket
  4. Spread mayonnaise inside arepa
  5. Stuff with seasoned chicken and cheese
  6. Add avocado slices
  7. Close arepa sandwich
  8. Wrap in foil to keep warm
  9. Pack plantain chips separately
