- Grab your largest mixing bowl and measure out 6 cups of Chex cereal. Set it aside where it won't get knocked over.
- In a 1-quart microwavable bowl, stir together 1 cup of chocolate chips, 1/2 cup of peanut butter, and 1/4 cup of butter. Microwave uncovered on high for 1 minute, then stir. If not completely smooth, microwave for an additional 30 seconds, checking until smooth.
- Once the chocolate-peanut butter mixture is smooth, stir in 1 teaspoon of vanilla extract.
- Pour the warm mixture over the Chex cereal and stir thoroughly until every piece is evenly coated.
- Transfer the coated cereal into a 2-gallon resealable bag. Add 1 cup of powdered sugar, seal the bag tightly, and shake until all pieces are coated.
- Spread the coated cereal on waxed paper to cool. Once cooled, store in an airtight container in the refrigerator.
