Ingredients
  

  • cups plain Greek yogurt
  • 3 ripe bananas
  • 2 tablespoons butter
  • 3 tablespoons brown sugar substitute like Swerve Brown
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon rum extract optional
  • Pinch of nutmeg

Method
 

  1. Slice 2 bananas and sauté in butter for 3-4 minutes
  2. Add brown sugar substitute and cinnamon, cook until caramelized (3-4 minutes)
  3. Let caramelized bananas cool completely
  4. Mash the third banana until smooth
  5. Whisk Greek yogurt with mashed banana, maple syrup, vanilla, rum extract, and nutmeg
  6. Fold in cooled caramelized bananas
  7. Churn in ice cream maker for 20-25 minutes
  8. Transfer to container and freeze for 3-4 hours
