Ingredients
 
 

  • ¾ cup Greek yogurt nonfat or low-fat, higher protein variety
  • ½ cup fresh blueberries
  • 1 teaspoon lemon zest freshly grated, plus extra for garnish
  • 1 teaspoon fresh lemon juice
  • 2 tablespoon gluten-free granola honey-drizzled variety preferred
  • 1 teaspoon honey

Equipment

  • 1 Small bowl 
  • 1 microplane or zester
  • 1 Clear glass or jar

Method
 

  1. In a small bowl, combine Greek yogurt with lemon zest and lemon juice. Stir well to combine.
  2. Spoon ⅓ cup lemon yogurt into the bottom of a clear glass. Add half the blueberries. Sprinkle 1 tablespoon granola on top.
  3. Repeat the layers, finishing with blueberries on top.
  4. Drizzle with honey and sprinkle extra lemon zest over the top. Serve immediately or refrigerate.

Notes

Substitutions: Swap blueberries for blackberries or a mixed berry blend. Use orange zest and juice instead of lemon for a softer citrus flavor.
Storage: Store covered in the fridge for up to 2 days. Blueberries hold their shape well, making this a great prep-ahead option.
Make-ahead: This is an ideal post-workout snack — prep 3 jars on Sunday for easy grab-and-go breakfasts throughout the week. Add granola just before eating for crunch.
