Ingredients

  • ½ cup Greek yogurt nonfat or low-fat
  • ½ cup fresh blackberries
  • ½ teaspoon dried culinary lavender buds food-grade only
  • 1 teaspoon honey
  • ½ teaspoon edible lavender buds optional, for garnish

Equipment

  • Small bowl
  • Fine mesh strainer
  • Clear glass or jar

Method

  1. Warm the honey slightly (10–15 seconds in the microwave or briefly over low heat). Stir in the dried culinary lavender buds. Let infuse for 10 minutes, then strain out the lavender buds using a fine mesh strainer.
  2. In a small bowl, stir the lavender-infused honey into the Greek yogurt until smooth.
  3. Spoon ¼ cup lavender yogurt into the bottom of a clear glass. Add half the blackberries on top.
  4. Repeat the layers, finishing with blackberries on top.
  5. Chill for 30 minutes to allow the flavors to meld. Garnish with a few edible lavender buds before serving.

Notes

Substitutions: Use rose water (a few drops stirred into the yogurt) instead of lavender for a different floral note. Swap blackberries for raspberries or a mix of dark berries.
Storage: Store covered in the fridge for up to 2 days. Lavender flavor deepens over time.
Make-ahead: Lavender-infused honey can be made up to 2 weeks ahead and stored in a sealed jar at room temperature. Assemble parfaits the night before and refrigerate — the 30-minute chill time is built in.
