Ce grand classique porte une histoire aussi riche que ses couches de cr\u00e8me.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-text-color\" style=\"color:#8B3A3A\">Un h\u00e9ritage de feuilletage<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Les origines du dessert remontent au moins \u00e0 1651, lorsque le cuisinier Fran\u00e7ois Pierre de La Varenne consigne une version primitive de p\u00e2tisserie en couches dans Le Cuisinier Fran\u00e7ois. Cette premi\u00e8re version utilisait parfois des confitures de fruits plut\u00f4t que de la cr\u00e8me p\u00e2tissi\u00e8re. Le mille-feuille tel qu&#8217;on le conna\u00eet aujourd&#8217;hui a \u00e9t\u00e9 perfectionn\u00e9 aux dix-huiti\u00e8me et dix-neuvi\u00e8me si\u00e8cles par des chefs comme Marie-Antoine Car\u00eame, \u00e0 qui l&#8217;on attribue la g\u00e9n\u00e9ralisation de la p\u00e2te feuillet\u00e9e travaill\u00e9e \u00e0 la main et de la cr\u00e8me p\u00e2tissi\u00e8re g\u00e9n\u00e9reuse.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Certains historiens estiment que l&#8217;appellation \u00ab Napol\u00e9on \u00bb, courante hors de France, n&#8217;a rien \u00e0 voir avec l&#8217;empereur. Elle serait plut\u00f4t une d\u00e9formation du mot napolitain, en r\u00e9f\u00e9rence \u00e0 la ville de Naples, elle aussi r\u00e9put\u00e9e pour ses p\u00e2tisseries en couches. L&#8217;ajout de pommes caram\u00e9lis\u00e9es est une \u00e9volution naturelle qui am\u00e9liore le dessert sur trois plans. Les pommes po\u00eal\u00e9es apportent une texture fondante qui se marie parfaitement avec le croustillant de la p\u00e2te et le moelleux de la cr\u00e8me, si bien que chaque bouch\u00e9e offre trois textures distinctes plut\u00f4t que deux. La l\u00e9g\u00e8re acidit\u00e9 du fruit tranche aussi avec la richesse de la cr\u00e8me, un \u00e9quilibre qu&#8217;une garniture uniquement sucr\u00e9e ne peut pas offrir.
