Un passage de 2 heures dans l&#8217;eau froide, chang\u00e9e une ou deux fois, retire cet exc\u00e8s et laisse place au vrai go\u00fbt du porc.<\/p>\n<p><strong>Le chou blanchi \u00e0 part, le vrai secret :<\/strong> plonger le chou 5 minutes dans une autre casserole d&#8217;eau bouillante, avant de l&#8217;ajouter \u00e0 la marmite, adoucit son go\u00fbt soufr\u00e9. C&#8217;est ce geste, plus que la recette elle-m\u00eame, qui distingue une pot\u00e9e r\u00e9ussie d&#8217;un plat trop parfum\u00e9 au chou cuit.<\/p>\n<p><strong>Un seul bouillon, plusieurs saveurs :<\/strong> viande, chou et l\u00e9gumes racines cuisent ensemble et \u00e9changent leurs go\u00fbts au fil des heures.
