C&#8217;est ce geste, invisible dans le r\u00e9sultat final, qui donne une blanquette \u00e0 la sauce claire plut\u00f4t que gris\u00e2tre.<\/p>\n<p><strong>Un roux qui reste blanc :<\/strong> contrairement \u00e0 beaucoup de sauces qui gagnent \u00e0 colorer, le roux d&#8217;une blanquette cuit \u00e0 peine 2 minutes, sans jamais brunir. C&#8217;est ce d\u00e9tail qui donne son nom au plat et sa couleur claire caract\u00e9ristique.<\/p>\n<p><strong>La liaison au jaune d&#8217;\u0153uf, hors du feu :<\/strong> une fois le jaune ajout\u00e9, la sauce ne doit plus bouillir.
