Sa p\u00e2te, plus grasse et plus souple qu&#8217;un fromage &#8220;type reblochon&#8221; industriel, fond en une nappe cr\u00e9meuse plut\u00f4t qu&#8217;en grumeaux, ce qui change compl\u00e8tement le r\u00e9sultat.<\/p>\n<p><strong>Des lardons dor\u00e9s \u00e0 sec :<\/strong> comme pour toutes nos recettes, ils cuisent sans mati\u00e8re grasse ajout\u00e9e et rendent leur propre graisse en cuisant. Le plat reste moins gras et le go\u00fbt des lardons, plus concentr\u00e9, ne se dilue pas dans de l&#8217;huile.<\/p>\n<p><strong>Des pommes de terre juste tendres, pas enti\u00e8rement cuites :<\/strong> 15 minutes \u00e0 l&#8217;eau suffisent. Trop cuites, elles se d\u00e9literaient au four et le gratin deviendrait une bouillie plut\u00f4t que des couches nettes qui tiennent \u00e0 la d\u00e9coupe.<\/p>\n<p><strong>Deux formats, une \u00e9tape en moins pour la version rapide :<\/strong> la version classique demande un grand plat et 30 minutes de four. Les portions individuelles \u00e0 l&#8217;air fryer r\u00e9duisent le temps de cuisson de moiti\u00e9 et \u00e9vitent de pr\u00e9chauffer un four entier pour un d\u00eener de semaine.<\/p>\n<p><strong>Elle est presque aussi bonne r\u00e9chauff\u00e9e que tout juste sortie du four :<\/strong> contrairement \u00e0 beaucoup de gratins, le reblochon refond facilement sans se
