Ce sont les \u0153ufs, la cr\u00e8me et les lardons qui font tout le go\u00fbt, une recette plus proche de son origine que la plupart des versions que l&#8217;on trouve aujourd&#8217;hui. Si vous tenez \u00e0 ajouter de l&#8217;emmental ou du gruy\u00e8re, vous obtiendrez une d\u00e9licieuse quiche au fromage, mais ce ne sera techniquement plus une lorraine.<\/p>\n<p><strong>Un fond croustillant, m\u00eame le lendemain :<\/strong> la cuisson \u00e0 blanc du fond de tarte, avant d&#8217;ajouter la garniture, est l&#8217;\u00e9tape que la plupart des recettes sautent. C&#8217;est elle, et elle seule, qui \u00e9vite un fond d\u00e9tremp\u00e9, du premier au dernier morceau.<\/p>\n<p><strong>Des lardons dor\u00e9s \u00e0 sec :<\/strong> pas besoin de mati\u00e8re grasse ajout\u00e9e, les lardons rendent leur propre graisse en cuisant.
