On fait dorer de vrais champignons avec de l&#8217;oignon, de l&#8217;ail et du thym, on les mijote dans un bouillon, puis on mixe le tout : ce sont les champignons eux-m\u00eames qui donnent sa texture au velout\u00e9. Sans farine ni pr\u00e9paration industrielle, il reste naturellement faible en glucides, environ 6 g de glucides nets par portion, c\u00e9to et sans gluten. Mixer les champignons cuits fait le m\u00eame travail sans aucune f\u00e9cule, ce qui maintient ce velout\u00e9 autour de 6 g de glucides nets, contre 15 g ou plus dans une version industrielle.<\/p>\n<p><strong>Le champignon, une star pauvre en glucides :<\/strong> il n&#8217;apporte qu&#8217;environ 2 g de glucides nets pour 100 g, avec une saveur profonde et charnue. Le velout\u00e9 est donc riche et rassasiant tout en restant c\u00e9to.<\/p>\n<p><strong>La coloration fait le go\u00fbt :<\/strong> faire cuire les champignons jusqu&#8217;\u00e0 ce que leur eau de v\u00e9g\u00e9tation s&#8217;\u00e9vapore et qu&#8217;ils dorent est l&#8217;\u00e9tape qui donne un go\u00fbt profond, digne d&#8217;un restaurant.
