Les vermicelles sont rinc\u00e9s \u00e0 l&#8217;eau froide pour rester souples et d\u00e9tach\u00e9s du b\u0153uf chaud, plut\u00f4t que de coller en bloc. Le b\u0153uf est \u00e9minc\u00e9 tr\u00e8s finement, puis saisi \u00e0 feu vif en petites quantit\u00e9s : il dore en moins de deux minutes et reste tendre plut\u00f4t que de bouillir dans son jus. La citronnelle et l&#8217;ail parfument la marinade, pas la po\u00eale, si bien que leur ar\u00f4me se cuit directement dans la viande. Et le nuoc-ch\u00e2m accomplit ce qu&#8217;aucune sauce lourde ne saurait faire : il assaisonne \u00e0 la fois les vermicelles, les crudit\u00e9s et le b\u0153uf, tout en gardant le bol l\u00e9ger.
