C&#8217;est cet amidon de surface qui lie la cr\u00e8me en une sauce soyeuse \u00e0 la cuisson, sans jamais avoir besoin de farine ni de roux. Faire d&#8217;abord fr\u00e9mir les rondelles dans la cr\u00e8me quelques minutes amorce la liaison et garantit une cuisson uniforme jusqu&#8217;au c\u0153ur, et non seulement sur le dessus. Une vari\u00e9t\u00e9 \u00e0 chair fondante tient \u00e0 la cuisson : au lieu de se d\u00e9liter, elle fond.
