Le panko, lui, est fabriqu\u00e9 \u00e0 partir de pain sans cro\u00fbte r\u00e9duit en gros flocons irr\u00e9guliers qui, \u00e0 la friture, forment une cro\u00fbte l\u00e9g\u00e8re et a\u00e9r\u00e9e, avec bien plus de surface et de croustillant. Ce craquement quand on croque dans un katsu bien r\u00e9ussi vient enti\u00e8rement du panko, pas de la technique.<\/p>\n<p><strong>Les cuisses de poulet restent juteuses \u00e0 feu vif :<\/strong> Les blancs se dess\u00e8chent vite pendant que la panure prend. Les cuisses contiennent plus de gras et de tissu conjonctif qui gardent l&#8217;int\u00e9rieur moelleux, m\u00eame si la temp\u00e9rature de l&#8217;huile varie un peu. R\u00e9sultat : un c\u0153ur juteux dans une coque croustillante, la qualit\u00e9 qui d\u00e9finit un bon katsu.<\/p>\n<p><strong>165 \u00b0C, la temp\u00e9rature cible pr\u00e9cise :<\/strong> Trop chaud, le panko dore avant que l&#8217;int\u00e9rieur n&#8217;atteigne 74 \u00b0C, et vous obtenez un bel ext\u00e9rieur sur un poulet pas assez cuit. Trop froid, l&#8217;enrobage absorbe l&#8217;huile au lieu de croustiller, et le r\u00e9sultat est lourd et gras.
