C&#8217;est l&#8217;amidon des pommes de terre qui fait l&#8217;essentiel de la liaison, le lait n&#8217;apporte que le moelleux, pas le corps. La cr\u00e8me enti\u00e8re reste facultative, pour une touche plus riche en fin de cuisson.<\/p>\n<p><strong>La bonne pomme de terre :<\/strong> une vari\u00e9t\u00e9 \u00e0 chair fondante comme la Charlotte ou la Bintje contient plus d&#8217;amidon que les vari\u00e9t\u00e9s \u00e0 chair ferme (Roseval, grenaille) et se d\u00e9lite joliment \u00e0 la cuisson, ce qui donne \u00e0 la soupe son velout\u00e9 sans farine ni roux.<\/p>\n<p><strong>Une cuisson en deux temps pour des saveurs plus franches :<\/strong> faire suer les poireaux et l&#8217;oignon dans le beurre 8 \u00e0 10 minutes avant d&#8217;ajouter le bouillon fait ressortir toute la douceur des alliac\u00e9s. Sauter cette \u00e9tape donne une soupe fade et v\u00e9g\u00e9tale : cette \u00e9tape n&#8217;est pas n\u00e9gociable.<\/p>\n<p><strong>Des ingr\u00e9dients simples et de saison :<\/strong> le poireau apporte de la vitamine C, du potassium et de l&#8217;allicine (le compos\u00e9 b\u00e9n\u00e9fique que l&#8217;on trouve aussi dans l&#8217;ail). La pomme de terre fournit des glucides complexes et du potassium.
