C&#8217;\u00e9tait ma r\u00e9f\u00e9rence absolue. Les puristes vont s\u00fbrement me contredire, mais c&#8217;\u00e9tait mon tout premier go\u00fbt de la sauce d&#8217;un restaurant, et une fois le restaurant et la version surgel\u00e9e disparus, j&#8217;ai pass\u00e9 des ann\u00e9es sans elle.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce printemps, les choses ont chang\u00e9. Tout le reste est b\u00e2ti pour le mettre en valeur.<\/p>\n<p style=\"color:#2A233E;\"><strong>Le ketchup ram\u00e8ne la douceur nostalgique :<\/strong> une demi-tasse de ketchup fait plus pour la saveur d&#8217;autrefois que du sucre seul, en ajoutant une douceur famili\u00e8re et un peu plus de corps de tomate.<\/p>\n<p style=\"color:#2A233E;\"><strong>Du b\u0153uf maigre et un peu de saucisse gardent l&#8217;\u00e9quilibre :<\/strong> une livre de b\u0153uf hach\u00e9 maigre avec quatre onces de saucisse italienne douce donne de la richesse sans lourdeur, et la sauce reste \u00e0 137 calories et 6 g de glucides nets par portion.<\/p>\n<p style=\"color:#2A233E;\"><strong>La f\u00e9cule de ma\u00efs d\u00e9lay\u00e9e lui donne du corps :<\/strong> ajout\u00e9e vers la fin, elle \u00e9paissit la sauce jusqu&#8217;\u00e0 la consistance \u00e0 napper que le restaurant utilisait, plut\u00f4t qu&#8217;une sauce claire et liquide.<\/p>\n<p style=\"color:#2A233E;\"><strong>Elle est faite pour le cong\u00e9lateur :<\/strong> la recette donne environ dix portions et garde sa qualit\u00e9 pendant des mois, alors un seul apr\u00e8s-midi de cuisine devient plusieurs soupers faciles.<\/p>\n<\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Comment j&#8217;ai retrouv\u00e9 la sauce<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pendant des ann\u00e9es, les gens ont \u00e9chang\u00e9 des tentatives de cette sauce en ligne, et aucune ne s&#8217;en approchait vraiment. Puis la r\u00e9put\u00e9e autrice de livres de cuisine Marcy Goldman a annonc\u00e9 qu&#8217;elle avait enfin perc\u00e9 le secret, en attribuant la saveur \u00e0 un seul ingr\u00e9dient secret : un m\u00e9lange d&#8217;\u00e9pices fait \u00e0 Montr\u00e9al appel\u00e9 El Ma-Mia. En moins d&#8217;une semaine apr\u00e8s avoir lu son billet, j&#8217;ai retrouv\u00e9 le m\u00e9lange, achet\u00e9 un pot, et j&#8217;avais tr\u00e8s h\u00e2te de voir ce qui arriverait.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">J&#8217;ai suivi sa recette \u00e0 la lettre et je l&#8217;ai servie \u00e0 un de mes fils et \u00e0 ma femme. Nous n&#8217;avons pas \u00e9t\u00e9 d\u00e9\u00e7us. Ce go\u00fbt distinctif de Piazza Tomasso \u00e9tait bien l\u00e0. Mais ce n&#8217;\u00e9tait pas tout \u00e0 fait la sauce dont je me souvenais, alors quelques jours plus tard je suis retourn\u00e9 au chaudron et j&#8217;ai commenc\u00e9 \u00e0 ajuster. Si vous voulez toute l&#8217;histoire du restaurant lui-m\u00eame, les grissini, le service \u00e0 l&#8217;auto, Magic Tom Auburn, elle vit dans le souvenir de cette grande <a href=\"https:\/\/forlunch.pro\/fr\/?p=391600\" style=\"color:#1A5276;\">institution montr\u00e9alaise<\/a> que l&#8217;on ch\u00e9rit longtemps apr\u00e8s sa fermeture.<\/p>\n\n\n\n<h3 class=\"wp-block-heading has-text-color\" style=\"color:#8B3A3A\">La version originale de Marcy Goldman contre ma version de Piazza Tomasso<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Trois changements ont fait le gros du travail. J&#8217;ai enlev\u00e9 le piquant, coup\u00e9 l&#8217;ail, et cherch\u00e9 la douceur dont je me souvenais de mon enfance.
