Les petites myrtilles sauvages concentrent un parfum sucr\u00e9-acidul\u00e9 bien plus intense que leurs cousines cultiv\u00e9es, et gliss\u00e9es entre deux p\u00e2tes croustillantes, elles donnent une tarte qui a le go\u00fbt de la fin de l&#8217;\u00e9t\u00e9 \u00e0 chaque bouch\u00e9e. Mais c&#8217;est le repos, une fois la tarte sortie du four, qui fait toute la diff\u00e9rence entre des parts bien nettes et une soupe de myrtilles.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">J&#8217;ai pr\u00e9par\u00e9 deux de ces tartes apr\u00e8s avoir achet\u00e9 12 tasses de myrtilles sauvages (environ 40 $ CA en septembre 2025) au march\u00e9 Atwater, un march\u00e9 de producteurs pr\u00e8s de chez moi \u00e0 Montr\u00e9al. J&#8217;en ai d\u00e9gust\u00e9 une tout de suite et j&#8217;ai congel\u00e9 l&#8217;autre. Ma famille a tellement aim\u00e9 la premi\u00e8re qu&#8217;elle m&#8217;a suppli\u00e9 de d\u00e9congeler la seconde presque aussit\u00f4t que la derni\u00e8re part a disparu. C&#8217;est ce qui donne ce go\u00fbt franc de myrtille que les tartes du commerce n&#8217;ont jamais.<\/p>\n<p><strong>L&#8217;astuce de la garniture \u00e0 moiti\u00e9 cuite :<\/strong> on pr\u00e9cuit la moiti\u00e9 des baies juste pour les \u00e9paissir, puis on les r\u00e9unit aux baies crues. On obtient une base qui se tient comme une confiture, plus la fra\u00eecheur du fruit entier. Fini la garniture qui coule sur l&#8217;assiette.<\/p>\n<p><strong>Vous ma\u00eetrisez le sucre :<\/strong> en pr\u00e9parant la garniture vous-m\u00eame, la dose vient de 150 g de sucre mesur\u00e9, pas d&#8217;une garniture industrielle gorg\u00e9e de sirop de glucose. C&#8217;est vous qui d\u00e9cidez du niveau de gourmandise.<\/p>\n<p><strong>La myrtille sauvage a du caract\u00e8re :<\/strong> plus petite mais plus puissante en saveur, sa couleur bleu-violet profond vient des anthocyanes, qu&#8217;elle concentre davantage que les vari\u00e9t\u00e9s cultiv\u00e9es.
