Ma famille a pratiquement v\u00e9cu chez Murray&rsquo;s, en grandissant dans la r\u00e9gion de Montr\u00e9al. J&rsquo;ai des souvenirs flous (sans doute parce que j&rsquo;\u00e9tais trop petite pour voir par-dessus la table) d&rsquo;avoir accompagn\u00e9 ma s\u0153ur a\u00een\u00e9e et ma cousine quand elles partaient affronter les pentes des d\u00e9butants \u00e0 l&rsquo;\u00e9cole de ski, le centre commercial de Ville Mont-Royal nous servant de grande gare centrale pour le ski-bus. Heureusement, ce carrefour anim\u00e9 abritait un Murray&rsquo;s, l&rsquo;un des nombreux diss\u00e9min\u00e9s dans Montr\u00e9al comme autant de petits phares de cuisine r\u00e9confortante. (H\u00e9las, ils ont tous fini par dispara\u00eetre, \u00e0 l&rsquo;exception d&rsquo;un dernier survivant, qui a tragiquement ferm\u00e9 des ann\u00e9es plus tard.)<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Murray&rsquo;s \u00e9tait un monde \u00e0 part de nos habitudes : le menu d\u00e9roulait toute une tapisserie de ce que j&rsquo;allais d\u00e9couvrir plus tard comme la grande cuisine de restaurant familiale, ce genre de plats qui tiennent au corps et r\u00e9chauffent l&rsquo;\u00e2me.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" src=\"https:\/\/forlunch.pro\/wp-content\/uploads\/Murrays-Bran-Muffins.webp\" alt=\"Les muffins au son de Murray&#039;s, le souvenir gourmand des restaurants de Montr\u00e9al\" title=\"\"><figcaption><\/figcaption><\/figure>\n\n\n\n<p class=\"wp-block-paragraph\">Mais voici ce qui m&rsquo;a toujours amus\u00e9e : sans faute, apr\u00e8s que la serveuse (toujours dans son bel uniforme bleu, telle une aimable membre de la \u00ab Murray&rsquo;s Air Force \u00bb) avait pris notre commande, elle demandait : \u00ab Voulez-vous des muffins ou des petits pains ? \u00bb \u00c0 la maison, on servait rarement du pain au d\u00eener, et les muffins, eux, \u00e9taient r\u00e9serv\u00e9s au petit-d\u00e9jeuner. Qui associe un muffin au son \u00e0 un poulet en panier ? Cela tenait du sacril\u00e8ge culinaire. On en proposait en g\u00e9n\u00e9ral deux sortes : muffins au son et muffins au ma\u00efs. Ce n&rsquo;est qu&rsquo;adolescente que j&rsquo;ai r\u00e9alis\u00e9 qu&rsquo;il n&rsquo;y avait aucun grain de ma\u00efs dans les muffins au ma\u00efs, et je les prenais \u00e0 la place du son quand ils venaient \u00e0 en manquer en fin de journ\u00e9e. La plupart des \u00e9tablissements de Montr\u00e9al fermaient \u00e0 20 h 30.<\/p>\n\n\n\n<h2 id=\"grandir-avec-les-muffins\" class=\"wp-block-heading\">Grandir avec les muffins au son de Murray&rsquo;s<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pourtant, en grandissant (et en commen\u00e7ant \u00e0 fr\u00e9quenter Murray&rsquo;s seule, en vraie gourmande), j&rsquo;ai d\u00e9velopp\u00e9 une profonde tendresse pour ce rituel insolite, et les muffins au son sont devenus mon p\u00e9ch\u00e9 mignon, un plaisir que je ne savourais qu&rsquo;entre ces murs sacr\u00e9s. (S&rsquo;ils n&rsquo;avaient que des muffins au ma\u00efs, je me r\u00e9signais \u00e0 contrec\u0153ur aux petits pains. Quelle horreur.) Chacun retrouve ainsi le caract\u00e8re consistant et r\u00e9confortant qui a fait la r\u00e9putation de l&rsquo;original de Murray&rsquo;s.<\/p>\n<p><strong>Deux sortes de fibres :<\/strong> la version all\u00e9g\u00e9e partage le son entre bl\u00e9 et avoine.
