D&rsquo;abord, parlons du tango entre le beurre et le sucre. Lorsque vous les battez ensemble en cr\u00e8me, vous emprisonnez de petites bulles d&rsquo;air dans la p\u00e2te. Cela rend vos biscuits l\u00e9gers, au lieu d&rsquo;\u00eatre durs comme une rondelle de hockey. Visez une texture ressemblant \u00e0 un gla\u00e7age p\u00e2le et l\u00e9ger.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Deuxi\u00e8mement, faites attention au moment de la \u00ab Grande Unification \u00bb (lorsque vous ajoutez vos ingr\u00e9dients secs). Vous devez m\u00e9langer juste assez pour ne plus voir de traces de farine blanche. Si vous continuez \u00e0 m\u00e9langer apr\u00e8s cela, les biscuits risquent de devenir durs. Enfin, n&rsquo;oubliez pas le test de patience. Ces biscuits sont tr\u00e8s mous \u00e0 leur sortie du four. Laissez-les reposer sur la plaque chaude pendant cinq minutes pour qu&rsquo;ils durcissent un peu, afin qu&rsquo;ils ne se cassent pas quand vous les ramasserez !<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Une note sur la texture : moelleux ou croquants ? Avant de prendre votre premi\u00e8re bouch\u00e9e, parlons du \u00ab facteur croquant \u00bb. Comme le m\u00e9lange \u00e0 cr\u00eapes est con\u00e7u pour \u00eatre l\u00e9ger et a\u00e9r\u00e9, ces biscuits ont une d\u00e9licieuse texture moelleuse qui rappelle celle d&rsquo;un g\u00e2teau \u2014 un peu comme le dessus d&rsquo;un muffin.
